  • 1500 g strawberries
  • 300 g white sugar
  • 1 lemon

Instructions

Step 1: Prepare the Strawberries

  • Wash and hull the strawberries, removing the green tops. Cut them into small pieces to ensure even cooking.

Step 2: Marinate the Strawberries

  • Combine the strawberry pieces with 300g white sugar in a large bowl. Stir thoroughly until all the strawberries are evenly coated. Let them rest for 30 minutes to release their natural juices.

Step 3: Cook the Purée

  • Transfer the marinated strawberries and their juices into a pot. Place over medium-low heat and stir constantly to prevent burning. Cook for about 30 minutes, allowing the mixture to reduce and thicken.

Step 4: Add Lemon Juice

  • Once the mixture starts to thicken, juice the lemon and stir the juice into the purée. This step enhances the flavor and extends shelf life. Continue cooking for another 10 minutes, stirring frequently, until the purée reaches your desired consistency.

Step 5: Cool and Store

  • Remove the pot from heat and let the purée cool completely. Once cool, transfer it to clean jars. Seal tightly and refrigerate.
