Instructions
Prepare the Red Beans:
Wash the red beans and freeze them overnight.
The next day, place the frozen beans in a pot with 330ml of water and 40g of sugar. Cook until the beans are tender.
Make the Red Bean Layer:
Let the cooked red beans cool slightly.
Soften 2.5 sheets of gelatin in a small amount of water and then stir them into the warm red bean mixture until fully dissolved.
Pour the mixture into a container and freeze for about 30 minutes.
Prepare the Coconut Milk Layer:
In a separate pot, gently heat 200g of milk with 50g of sugar until it’s warm.
Remove from heat and add 200g of coconut milk and 2.5 sheets of softened gelatin. Stir until the gelatin is completely dissolved.
Assemble the Pudding:
Pour the coconut milk mixture over the red bean layer in the container.
Freeze for an additional 40 minutes.
Serve:
Once set, remove the pudding from the mold and garnish with osmanthus flowers and a drizzle of honey.
Serve with a side of lightly sweetened organic milk for a perfect pairing.
