After I make my tuna cucumber salad, I like to get a little creative with how I use it in different dishes.

While I’m a big fan of traditional sushi with rice, I wanted to try something different with this recipe.

This Cucumber Sushi Roll is a fun twist because it skips the rice entirely, making it much lighter and fresh. It’s a great option for anyone looking for a healthier sushi alternative or just something new to try!

For this recipe, I prefer to use large, straight cucumbers because they’re easier to slice evenly and they create beautiful, long strips for rolling.

I use a vegetable peeler to cut the cucumbers into thin, even slices.

Tips for Making the Perfect Cucumber Sushi Rolls

  • Choose the Right Cucumbers: Use large, straight cucumbers for easier slicing and rolling.
  • Slice Thin and Even: A vegetable peeler works best for creating thin, uniform cucumber strips.
  • Get Creative with Fillings: Besides tuna and potatoes, you can add avocado, carrots, bell peppers, or even quinoa for extra flavor and texture.
  • Season to Taste: Adjust the seasoning in the tuna salad to your preference. Add a squeeze of lemon juice or a dash of chili flakes for a zesty kick.

  • 2-3 potatoes (about 300g)
  • 1 cucumber
  • 1 can of tuna (80g)
  • Steamed corn kernels (50g)
  • 1 tsp crushed black pepper
  • 1/2 tsp salt
  • 1 tbsp mayonnaise (or salad dressing as a substitute)
  • A little chopped parsley (optional, for decoration)

Instructions

Prepare the Potatoes: Wash and peel the potatoes, then cut them into even small pieces. This will ensure they cook at the same time. Steam the potato pieces over high heat for 15-20 minutes, or until they’re soft and can be easily pierced with chopsticks. Once the potatoes are done, take them out of the steamer and mash them until smooth using a spoon or rolling pin. Stir in 1/4 tsp salt and 1/2 tsp crushed black pepper. Prepare the Tuna: In a bowl, add 50g of cooked corn kernels. Open the tuna can and drain out most of the olive oil. You can place the tuna in a sieve to let the excess oil drip out. Once drained, add the tuna to the bowl with the corn. Add 1/2 tsp crushed black pepper, 1/4 tsp salt, and 1 tbsp mayonnaise. Mix well until the tuna absorbs all the flavors.Prepare the Tuna

Assemble the Sushi: Form the potato mixture into small balls. Carefully place each ball inside a cucumber roll and press them down to flatten.
