Dragon Fruit Mochi Recipe

Here’s another mochi recipe I love that’s easy to make. This one pairs the chewy mochi dough with the bright, juicy flavor of dragon fruit, creating a delightful treat that’s as simple as it is delicious.

Easy Dragon Fruit Mochi with a Coconut and Fruit Filling

Dragon Fruit Mochi is a delightful dessert that combines the chewy, soft texture of mochi with the vibrant, fruity flavor of dragon fruit.

The mochi dough is made from glutinous rice flour, cornstarch, sugar, and milk, steamed until it becomes soft and elastic.Dragon Fruit Mochi

While the dough is similar to that in the Mango Mochi recipe, I make a slight variation by adding corn oil and dragon fruit juice instead of butter.

After the dough cools slightly, it’s flattened, filled with cubes of dragon fruit, and then shaped into small balls. These are often coated in coconut flakes or dusted with cooked glutinous rice flour to prevent sticking and enhance flavor.Dragon Fruit Mochi

Ingredients:

  • 120g glutinous rice flour
  • 30g cornstarch
  • 30g granulated sugar
  • 165ml milk
  • 5g corn oil
  • 2 dragon fruits, sliced into cubes (or other fruit of your choice), with some made into 10g dragon fruit juice
  • 1/4 cup coconut flakes

Instructions:

Prepare the Mochi Dough: In a bowl, mix the glutinous rice flour, cornstarch, granulated sugar, and milk until smooth. Strain the mixture to achieve a finer texture.

Prepare for Steaming: Cover the bowl with plastic wrap to prevent water droplets from getting in, and poke a few small holes in the wrap with a toothpick to allow steam to escape.

While steaming the mochi dough, prepare the dragon fruit by slicing it into cubes and making the juice.slice the dragon fruit

Finish the Dough: Once steamed, add 5g of corn oil and 10g of dragon fruit juice to the dough. After it cools down, put on gloves and knead the dough for about 5 minutes, stretching and pulling until it becomes elastic.add 5g of corn oil and 10g of dragon fruit juice to the doughknead the dough

Assemble the Mochi: Divide the dough into 50g portions. Flatten each portion, place a tablespoon of dragon fruit (or other fruit) in the center, and wrap the dough around it.
